In 2015 I went to the village of Schitu Stavnic in Romania to witness the Taierea Pocului, a century long tradition where a pig is sacrificed right before the Christmas festivities. The Ifrim family took me in and and hosted me throughout the process. A meal of pork cooked in its own lard, warm polenta, pickled watermelon and tuica is cooked right after the killing while the remaining meat is stored to last throughout the rest of the winter.
